Comments: Roasted Cauliflower and Cumin Quiche


Hey Meg!
Was looking for your Mac and Cheese recipe (the girls fell in love with it when you made it in Italy this summer) and saw your quiche. Looks great! I don't recall much cauliflower growing up either, but if you do happen to overcook and end up with the mushy mash, turn it into mashed cauliflower with same ingredients as mashed potatoes. Kids and critics can hardly tell the difference. (Aside from that lingering odor that you mentioned!)

Ann, after writing this I remembered that we DID see raw cauliflower pretty often on the raw veggie platters at holidays. So maybe it's just the cooked version she avoided?

And by the way, the mac-a-chee I made for the girls was not exactly the same as the recipe on this site. The place we were staying didn't have any flour, so I substituted an egg instead, and I think I used a combination of Fontina and Parmesan cheese instead of cheddar. Glad the girls liked it!

You're both correct. I'm NOT a fan of cauliflower. Love broccoli, tho.
