Great recipe. I just tried a Mango Salsa that I found on kathyireland.com. Wonderful combination of flavors. I'm sure this would work very well with this Mexican Corn and Peppers Casserole. Also I found many other recipes that I want to try as well as some information on home, family, fashion, gardening and design.
Wow Kathy Ireland is a busy lady.
