The first beets of the season are too tempting to pass up -- I posted a beet recipe today, too. I find beet greens to be bitter, at least for my taste, so I think I'll try sautÃ©ing them for a minute or two in the vinaigrette to mellow them a bit, and then adding the warmed greens and vinaigrette to the salad.
