What a great idea to use sweet potato! We've often wondered about making flavoured pasta too. But usually, we decide to just go with plain, based on the argument that if it ain't broke, don't fix it. Because the plain pasta is SO good, isn't it.
And I know what you mean about using the handcrank machine. It really is the best, isn't it?

Orange veggies like sweet potatoes and butternut squash take to sage and butter like I take to a kitchen supply store.

Butternut eh? Top idea. I've used tomato paste before, and spinach, but never butternut.
