Fennel is a great idea for squash.
We want to do a squash dish for Xmas dinner. I may riff on this recipe.

Okay, actually I was kind of guessing on that based on my portion. I used two small onions and one glass of wine and felt it was just enough for one serving of two slabs. I figured I could get another three similarly sized servings out of the half of a squash and so multiplied by three.
I thought the sauce really turned into into an interesting dish and was operating on the more-is-better theory!
