Yyyuuuuummmm. I made a version of this for dinner tonight with Quorn pieces rather than potatoes, and a spoonful of cream stirred into the courgette mixture just cos I had it kicking around. It was luscious, and even my courgette-hating boyfriend lapped it all up. So good to have a use for all those courgettes that appear in the veggie bag at this time of year.
BTW Nigel is indeed a god. We have a framed picture of him in our kitchen, smiling benevolently and declaring that "a blue brie is perfectly adequate". I got an email from him once. It was one of the proudest moments of my life so far.

I'm afraid there is no real substitute for Lancashire cheese. There is nothing to stop you using another cheese that cooks well, but it will have neither the texture nor flavour of Nigel's dish. If you are in England, you can get reasonable Lancashire cheese at many supermarkets. I could not advise using "Cheddar", so much of this barely qualifies as cheese, or even food, in my view. In Australia, the Ashgrove company in Tasmania does a reasonable approximation to Lancashire cheese. I've tried it in this recipe, and it works well.
